Principle of freeze-drying technology:
Vacuum freeze drying technology (freeze drying technology for short) is a comprehensive interdisciplinary technology that studies the heat and mass transfer process, characteristics and laws of the drying of frozen materials under vacuum. The development of freeze drying technology requires the support of vacuum refrigeration, heating, mechanical transmission, automatic control and other technologies.
The principle of vacuum freeze drying is based on the three-phase diagram of water. Below the triple point pressure of water (610.5Pa), there is no liquid water. Solid ice can be directly sublimated into water vapor. If a certain amount of heat is provided at this time, the ice can absorb the heat and sublimate into gas, thereby dehydrating the material. Therefore, it is also called freeze sublimation drying.


Advantages of freeze-drying technology:
Drying is one of the ways to keep substances from spoiling. There are many ways to dry, such as sun drying, boiling, drying, spray drying and vacuum drying. However, these methods are all carried out at temperatures above 0 degrees or higher. The dried products are generally reduced in size and hardened in texture. Some substances are oxidized, most of the volatile components are lost, and some heat-sensitive substances, such as proteins, are denatured. Freeze drying is to cool down and freeze a substance containing a large amount of water into a solid in advance, and then sublimate the water vapor directly under vacuum conditions, while the substance itself remains in the ice shelf during freezing, so the loose porous volume remains unchanged after drying.
Freeze drying is carried out at low temperatures, so it is particularly suitable for many heat-sensitive substances. For example, proteins and microorganisms will not denature or lose their biological activity. Therefore, it is widely used in medicine.
When drying at low temperatures, some volatile components in the material are lost very little, which is suitable for drying some chemical products, medicines and foods; during the freeze-drying process, the growth of microorganisms and the action of enzymes cannot take place, so the original properties can be maintained; since the dried material is loose and porous, and is spongy, it dissolves quickly and completely after adding water, and almost completely restores its original properties; since it is dried in a frozen state, the volume remains almost unchanged, the original structure is maintained, and no concentration occurs; since it is dried in a vacuum state, there is very little oxygen, so no oxidation reaction occurs, and the appearance color is protected; drying can remove more than 95-99% of the moisture, so that the dried product can be stored for a long time and is not easy to deteriorate; therefore, freeze drying is currently widely used in the pharmaceutical industry, food industry, scientific research and other departments.
