Green ignorance.
There are several protective gases for food modified atmosphere packaging:
The protective gases commonly used at home and abroad are CO2 (carbon dioxide), O2 (oxygen), and N2 (nitrogen). 
Their respective functions are:
CO2: It is a kind of inhibition of bacterial growth and reproduction. 
Feature:
(1) The best antibacterial effect is in the lag phase of the bacteria's reproduction curve (the inhibitory bacteria index is within about 100/100g).
(2) It is easy to dissolve in water and fat at low temperature.
(3) It has antibacterial effect on most aerobic bacteria, but it is ineffective against anaerobic bacteria and yeast.
(4) Usually the lowest concentration that inhibits bacteria is 30%.
O2: It has three functions:
(1) Inhibit the growth and reproduction of anaerobic bacteria.
(2) Maintain the red color of fresh pork, beef and mutton.
(3) Maintain aerobic respiration in the metabolism of fresh fruits and vegetables.
N2: Colorless, odorless, non-toxic inert gas, does not have any effect with food, only as a flat gas for filling the packaging box.
